10 g unsweetened cocoa powder
3 g xanthan gum (about 1 teaspoon)
40 g / 1.5 oz erythritol
250 ml / 8.5 fl oz water
Instructions
Combine the ingredients: In a bowl, add the cocoa powder, erythritol, xanthan gum, and water.
Blend until smooth: Using a hand blender or a strong whisk, blend vigorously until the mixture is smooth, glossy, and fully combined. It should slightly thicken thanks to the xanthan gum.
Chill and store: Pour into a clean jar or container with a lid and refrigerate. The sauce will continue to thicken slightly as it cools.
