Ingredients
1/2 cup white rice (short grain preferred)
2 cups plant-based milk (e.g., soy, almond, oat)
2 tablespoons erythritol or sweetener of choice
1/2 teaspoon vanilla extract
1 cinnamon stick or 1/2 teaspoon ground cinnamon
Zest of 1 lemon (optional)
Pinch of salt
Instructions
Rinse rice: Rinse the rice thoroughly under cold water.
Cook: In a saucepan, combine the rice, milk, sweetener, cinnamon, lemon zest, and salt. Bring to a boil over medium heat.
Simmer: Lower the heat and simmer, stirring frequently, for 25–30 minutes or until the rice is tender and the mixture is creamy.
Finish: Remove from heat and stir in the vanilla extract. Let it sit for a few minutes to thicken slightly.
Serve: Enjoy warm, or transfer to containers and refrigerate to serve chilled later. Sprinkle with cinnamon if desired.
