150 g apple (about 1 medium apple, peeled and chopped)
90 g oat flour (approx. 3 oz)
1 tablespoon baking powder
80 ml soy yogurt (approx. 2.5 fl oz)
Instructions
Blend: In the hand blender's cup, combine the apple, oat flour, baking powder, and soy yogurt. Blend until smooth.
Microwave: Pour the mixture into a microwave-safe container that has been lightly greased.
Cook: Microwave for 2 minutes. If needed, add extra time until the cake puffs up and sets.
Cool: Let it cool to room temperature.
Serve: Add your favorite toppings such as nut butter, cinnamon, or sliced apples.
