📋 Ingredients

Serves 2–4


  • Mango: 2 units

  • Agar-Agar: 0.8 oz / 20 gr.


👨‍🍳 Instructions


  • Prepare the mangoPeel, cut, and blend the mangoes until smooth.

  • Heat with agar-agarPour the mango purée into a frying pan over medium heat. Add the agar-agar and stir until fully dissolved and the mixture is smooth.

  • Whip the mixtureTransfer to a bowl and beat with a mixer for about 15 minutes, until it triples in volume.

  • Mold and chillPour the airy mixture into a loaf pan or mold. Refrigerate for at least 4 hours until set.


🍽 Serving Suggestions

  • Top with coconut whipped cream and lime zest

  • Serve with fresh berries or mint leaves

  • Drizzle with a bit of passion fruit sauce
