📋 Ingredients

Makes about 1 cup


  • Dried tomatoes: 3.5 oz / 100 g

  • Cashews: 2 oz / 60 g

  • Paprika: 1 teaspoon

  • Olive oil: 2 fl oz / 60 ml

  • Salt and pepper: to taste


👨‍🍳 Instructions


  • Soak the tomatoesSoak the dried tomatoes in hot water for 20 minutes.

  • Remove seedsRemove the seeds from the tomatoes and reserve a splash of the soaking water.

  • Blend the ingredientsIn a bowl or blender cup, combine the soaked tomatoes, cashews, paprika, olive oil, and a splash of the reserved tomato water. Add salt and pepper to taste.

  • Process until smoothBlend thoroughly until you get a thick, spreadable paste.

  • StoreTransfer to a container with a lid and store in the fridge.

  • Spread on whole grain toast or crackers

  • Use as a filling for sandwiches or wraps

  • Add a spoonful to roasted veggies or baked potatoes
