📋 Ingredients
Makes about 1 cup
Dried tomatoes: 3.5 oz / 100 g
Cashews: 2 oz / 60 g
Paprika: 1 teaspoon
Olive oil: 2 fl oz / 60 ml
Salt and pepper: to taste
👨🍳 Instructions
Soak the tomatoesSoak the dried tomatoes in hot water for 20 minutes.
Remove seedsRemove the seeds from the tomatoes and reserve a splash of the soaking water.
Blend the ingredientsIn a bowl or blender cup, combine the soaked tomatoes, cashews, paprika, olive oil, and a splash of the reserved tomato water. Add salt and pepper to taste.
Process until smoothBlend thoroughly until you get a thick, spreadable paste.
StoreTransfer to a container with a lid and store in the fridge.
