🧾 Ingredients


For 2 sandwiches:

  • Olive oil: 1 cup (240 ml)

  • Vegan milk (e.g. soy or oat milk): ½ cup (120 ml)

  • Fish-flavored seasoning (e.g. seaweed flakes, vegan fish sauce, or dill + umami blend): 3 teaspoons

  • Black olives: ½ cup (sliced – approx. 60 g / 2 oz)

  • Lemon: 1 whole (juice only)

  • Pickles: 1 small pickle (finely chopped)

  • Lettuce: 1 large leaf (shredded)

  • Bread: 2 slices (your choice: whole grain, sourdough, etc.)

  • Tofu (firm or extra-firm): 100 g / 3.5 oz (crumbled or grated)

  • Salt: to taste


👨‍🍳 Instructions


  1. Make the dressingIn a tall container or jar, blend together the olive oil, vegan milk, lemon juice, and a pinch of salt using a hand blender. Blend until the mixture thickens and emulsifies into a creamy dressing — similar in texture to mayonnaise.

  2. Add flavorStir in the fish-flavored seasoning and mix well until fully combined. Taste and adjust salt or lemon if needed. Set aside.

  3. Build the fillingIn a mixing bowl, add the crumbled or shredded tofu, sliced black olives, finely chopped pickle, and julienned lettuce. Pour the dressing over the top.

  4. Combine thoroughlyMix everything together until the ingredients are evenly coated and the mixture resembles a creamy, plant-based tuna salad.

  5. Assemble the sandwichToast your bread if desired, then generously spoon the filling onto one slice. Top with the second slice and press gently.

  6. Serve and enjoySlice in half and serve immediately — or wrap it up for a perfect on-the-go lunch.
