🧾 Ingredients

  • Empanadas dough: 12 units

  • Tofu: 10.5 oz / 300 gr.

  • Onion: 2 units

  • Red pepper: 1/2 unit

  • Carrot: 1 unit

  • Garlic: 2 cloves

  • White wine: 2 tablespoons

  • Paprika: 1 teaspoon

  • Curry powder: 1 teaspoon


👨‍🍳 Instructions

  1. Finely chop onions, carrot, bell pepper, and garlic. Sauté everything in a frying pan over medium heat with a little oil.

  2. Cut the tofu into small pieces, add to the pan, and mix.

  3. Add the spices, white wine, salt, and pepper to taste. Stir well.

  4. Lower the heat and cook for 10 minutes, stirring occasionally.

  5. Turn off the heat and let the mixture rest for at least 15 minutes.

  6. Place some of the filling onto each empanada disc and seal the edges.

  7. Bake at 180ºC/350ºF for about 10 minutes.

  8. Check for doneness—empanadas should be golden brown.
