🧾 Ingredients
Cashews: 3/4 cup
Tofu: 9 oz / 265 gr.
Apple cider vinegar: 1 tablespoon
Lemon: 1 unit
👨🍳 Instructions
Boil the cashews for 15 minutes to soften.
Drain and set aside to cool slightly.
Add the cashews, tofu, lemon juice, vinegar, and a pinch of salt to a blender.
Blend until very smooth. (Optional: add 2 tablespoons of miso paste for extra umami flavor.)
Chill in the refrigerator for a few hours before serving.
