🧾 Ingredients

  • Cashews: 3/4 cup

  • Tofu: 9 oz / 265 gr.

  • Apple cider vinegar: 1 tablespoon

  • Lemon: 1 unit


👨‍🍳 Instructions

  1. Boil the cashews for 15 minutes to soften.

  2. Drain and set aside to cool slightly.

  3. Add the cashews, tofu, lemon juice, vinegar, and a pinch of salt to a blender.

  4. Blend until very smooth. (Optional: add 2 tablespoons of miso paste for extra umami flavor.)

  5. Chill in the refrigerator for a few hours before serving.
