Sweet potato (cooked & peeled): 1 unit (medium size — approx. 150–200 g / 5–7 oz)
Rice flour: 4 tablespoons (about 30 g / 1 oz)
Fresh cheese (crumbled or grated): 100 g / 3.5 oz
Baking powder: 1 teaspoon (5 g)
Optional: pinch of salt, spices like cinnamon or nutmeg for a sweet version, or paprika for savory
👨🍳 Instructions
Cook the sweet potatoBake, steam, or microwave the sweet potato until soft and tender. Let it cool slightly.
Mash it upPeel the sweet potato, place it in a bowl, and mash it thoroughly with a fork until smooth.
Mix the doughAdd the rice flour, fresh cheese, and baking powder. Mix until all the ingredients are fully incorporated and a soft, moldable dough forms.
Shape the breadsWith slightly wet hands, form the dough into small balls or slightly flattened buns. Place them on a greased or parchment-lined baking tray.
Optional glazeFor a golden crust, brush the tops lightly with beaten egg or a splash of olive oil.
BakeBake at 180ºC / 350ºF for 15 minutes, or until puffed and lightly golden.
Cool & enjoyLet them rest for a few minutes. Serve warm or at room temperature.
