🍊 Stuffed Sponge Cake (Vegan Microwave Edition!)

This vegan version of our microwave sponge cake keeps all the flavor and texture of the original while using soy yogurt as the base. It's perfect for a quick snack or dessert when you're craving something sweet and wholesome.

Ingredients
20 g oat flour (approx. 1 oz)
10 g plant-based protein powder (approx. 1/2 oz)
10 g cocoa powder (approx. 1/2 oz)
Zest of 1 orange
50 ml soy yogurt (approx. 2 fl oz)
Optional: sweetener of your choice
Instructions
Mix the base: In a bowl, stir together the soy yogurt and orange zest.
Add dry ingredients: Add the oat flour, plant-based protein, and cocoa powder. Sweeten to taste and mix until smooth.
Prepare your container: Lightly grease a microwave-safe mug or bowl with vegan butter or oil.
Microwave magic: Pour the mixture into the container and microwave on high for 1 minute.
Cool and set: Let it rest at room temperature for a couple of minutes before enjoying.
Topping Tips
Add a dollop of coconut cream.
Sprinkle crushed nuts or cacao nibs.
Drizzle with maple syrup or fruit puree.
