These Strawberry Little Ice Creams are the perfect grab-and-go snack for hot days or a sweet dessert option for any time. Made with fresh strawberries, naturally sweetened dates, and creamy vegan milk, they’re delightfully fruity, refreshing, and freezer-friendly.


Kitchen Tools

  • Hand blender

  • Ice cream molds


Ingredients

  • 125 g / 4.5 oz strawberries (fresh or thawed from frozen)

  • 200 g / 7 oz vegan milk (e.g. oat, almond, or soy)

  • 30 g / 1 oz dehydrated dates (soaked if needed for easier blending)


Instructions

  1. Blend the ingredients: In a hand blender or high-powered blender, combine the strawberries, vegan milk, and dates. Blend until smooth and uniform.

  2. Fill the molds: Pour the mixture into ice cream molds. If using popsicle molds, insert the sticks.

  3. Freeze: Place in the freezer for at least 4 hours, or until fully set.


Serving Ideas

  • Dip the tips in melted dark chocolate for a fun twist

  • Roll the frozen tips in crushed nuts or coconut

  • Serve with fresh mint leaves on the side for presentation


Storage

Keep in the freezer in their molds or a sealed container for up to 1 week.
