3 garlic cloves, sliced
1/2 onion, chopped
1/2 red bell pepper, chopped
1 tablespoon whole wheat flour
1/2 cup (120 ml) white wine
2 tablespoons nutritional yeast
3/4 cup (180 ml) water
Optional seasonings: 1 tablespoon each of paprika, dried parsley, salt, and black pepper (to taste)
Instructions
Sauté the aromatics: In a skillet over medium heat, add a little oil and brown the sliced garlic until fragrant.
Cook the vegetables: Add the chopped onion and red bell pepper. Sauté until golden and tender.
Season: Add your preferred seasonings—suggested: 1 tablespoon each of paprika, dried parsley, salt, and black pepper. Stir well.
Add flour and cook: Stir in the whole wheat flour and cook for 2–3 minutes to remove the raw flavour.
Deglaze and simmer: Add the white wine and 3/4 cup of water. Stir to combine and let the sauce simmer for 8–10 minutes.
Blend and finish: Transfer the mixture to a blender or use a hand blender directly in the pan. Add nutritional yeast and blend until smooth and creamy. Adjust consistency with a little extra water if needed.
