This Sauce for Vegan Meatballs is savoury, warming, and packed with layered flavour. Built on a base of sautéed garlic, onion, and red pepper, it’s thickened with flour and enriched with white wine and nutritional yeast. Ingredients

  • 3 garlic cloves, sliced

  • 1/2 onion, chopped

  • 1/2 red bell pepper, chopped

  • 1 tablespoon whole wheat flour

  • 1/2 cup (120 ml) white wine

  • 2 tablespoons nutritional yeast

  • 3/4 cup (180 ml) water

  • Optional seasonings: 1 tablespoon each of paprika, dried parsley, salt, and black pepper (to taste)


Instructions

  1. Sauté the aromatics: In a skillet over medium heat, add a little oil and brown the sliced garlic until fragrant.

  2. Cook the vegetables: Add the chopped onion and red bell pepper. Sauté until golden and tender.

  3. Season: Add your preferred seasonings—suggested: 1 tablespoon each of paprika, dried parsley, salt, and black pepper. Stir well.

  4. Add flour and cook: Stir in the whole wheat flour and cook for 2–3 minutes to remove the raw flavour.

  5. Deglaze and simmer: Add the white wine and 3/4 cup of water. Stir to combine and let the sauce simmer for 8–10 minutes.

  6. Blend and finish: Transfer the mixture to a blender or use a hand blender directly in the pan. Add nutritional yeast and blend until smooth and creamy. Adjust consistency with a little extra water if needed.


Serving Ideas

  • Spoon generously over vegan meatballs or lentil patties

  • Use as a sauce for mashed potatoes or whole grains

  • Pair with pasta for a hearty, rustic dish


Storage

Refrigerate in an airtight container for up to 4 days, or freeze in portions for up to 1 month.
