Serves 2–3


  • Red pepper: 1 unit

  • Carrot: 1 unit

  • Zucchini: 1/2 unit

  • Peas: 1 can

  • Basmati rice: 1 cup


šŸ‘Øā€šŸ³ Instructions


  • Cook the ricePut the basmati rice in a pot with water and cook according to package instructions.

  • SautĆ© the vegetablesCut the red pepper and carrot into cubes and sautĆ© them in a pan with a little vegetable oil and paprika, until softened and integrated.

  • Add zucchiniChop the zucchini into medium pieces and add it to the pan. Season with salt and spices to your liking (recommended: garlic powder, ginger, cumin, and curry).

  • Mix in rice and peasOnce the rice is cooked, add it to the pan with the sautĆ©ed vegetables. Add the peas and stir well.

  • Finish with cream (optional)Reduce heat to low and add 1 tablespoon of coconut cream, if using. Stir for another minute.

  • Let it restTurn off the heat and let the dish rest at room temperature before serving.
