Serves 2–3
Basmati rice: 1/2 cup
Garlic: 4 cloves
Onion: 1/2 unit
Carrot: 1 unit
Red pepper: 1/2 unit
Tofu: 7 oz / 200 gr.
Paprika: 1 tablespoon
Sunflower seeds: 1/2 oz / 15 gr.
Pumpkin seeds: 1/2 oz / 15 gr.
👨🍳 Instructions
Cook the riceIn a pot, combine the basmati rice with 1 cup of water and a pinch of salt. Cook over low heat for 15 minutes, or until the rice is tender and water absorbed.
Sauté the vegetablesDice the garlic, onion, carrot, and red pepper. Sauté them in a frying pan with a drizzle of vegetable oil and the paprika until softened.
Add the tofuCut the tofu into pieces and add it to the pan. Sauté until golden on all sides.
Combine rice and veggiesAdd the cooked rice to the pan with the tofu and vegetables. Stir well and let rest at room temperature.
Toast the seedsIn a dry pan, toast the sunflower and pumpkin seeds until lightly browned and fragrant.
ServeServe the rice warm and sprinkle the toasted seeds on top.
