There’s something truly comforting about a warm, cheesy sandwich straight from the pan – crispy on the outside, soft and melty on the inside. This egg sandwich recipe is incredibly simple yet full of flavour. Made with just four basic ingredients, it’s perfect for busy mornings or when you want something homemade without the hassle.

🧾 Ingredients


For one hearty sandwich:


  • Wheat flour: 20 g (approx. 2½ tablespoons)

  • Natural tomato purée: 30 g / 1 oz (approx. 2 tablespoons)

  • Organic egg: 1 large

  • Hard cheese (e.g. cheddar, manchego, or gouda): 30 g / 1 oz (grated)

  • Optional: A drizzle of olive oil for the pan, salt and pepper to taste





👨‍🍳 Instructions


  1. Mix it up

    In a bowl, combine the wheat flour, natural tomato purée, and egg. Stir well until you get a smooth, lump-free batter. Add a pinch of salt or your favourite herbs if you like a savoury touch.

  2. Cook the base

    Heat a non-stick frying pan over medium heat. Add a small drizzle of oil to prevent sticking. Pour in the batter and spread it out like a thick pancake. Cook for about 2–3 minutes per side, until golden and set.

  3. Add the cheesy heart

    Once cooked, sprinkle the grated cheese over one half of the pancake while still in the pan. Let it melt slightly.

  4. Fold & finish

    Fold the pancake in half over the cheese to form a sandwich. Press gently with a spatula and cook for another 30 seconds to 1 minute, just until the cheese is fully melted and gooey.

  5. Serve hot

    Remove from the pan and enjoy immediately! You can pair it with a fresh salad, a handful of arugula, or even some sliced avocado for a nutritious upgrade.

This recipe is wonderfully adaptable. Add chopped herbs, a pinch of paprika, or some sautéed onions for an extra punch of flavour. For a protein boost, toss in a few cooked lentils or tofu crumbles into the batter.
