  2. Remove the shells (if needed)Drain the seeds using a sieve. If using unhulled seeds, gently remove the outer shells by pinching and peeling (this can take a few minutes but improves texture). If already hulled, skip this step.

  3. Blend the mixtureIn a blender or tall mixing container, add the soaked seeds, 1 cup of fresh water, turmeric, black salt, and mustard seeds. Blend for a few seconds until smooth and thick, but not watery.

  4. Cook your scrambleHeat a non-stick frying pan over medium-high heat. Add a small amount of oil or vegan margarine. Pour in the pumpkin seed mixture and stir gently in circular motions as it begins to set.

  5. Scramble to perfectionCook for 2–4 minutes, stirring frequently, until the mixture thickens and resembles scrambled eggs. Adjust the texture by adding a splash of water if too thick, or cooking slightly longer if too soft.

  6. Serve hotPlate and enjoy immediately! Great on toast, in breakfast wraps, or alongside sautéed veggies.
