🧾 Ingredients
Potatoes: 1 unit
Almond flour: 3 tablespoons
Vegan milk: 1/4 cup
Rice flour: 1 tablespoon
Cornstarch: 1/2 cup
Nutmeg: 1/2 teaspoon
Vegan cheese: 3.5 oz / 100 gr.
👨🍳 Instructions
Cook the potato, in boiling water, until soft.
Transfer the potato to a bowl, and puree.
Add the rest of the ingredients, except the starch, and mix well until completely integrated.
Add 1/2 cup of starch and mix again. Add salt and pepper to taste.
Form long cylinders and cut them into 2-centimeter pieces.
In the saucepan, bring plenty of water to a boil.
When it's at the boiling point, add the gnocchi and cook them until they float.
In the frying pan, over medium heat, put a little olive oil and add the gnocchi.
Add the cheese, and stir for a few minutes until it is integrated with the pasta.
