  • Hand blender or high-powered food processor (must be strong)

  • Spoon or spatula


Ingredients

  • 250 g / 8 oz shelled pistachios (unsalted)


Instructions

  1. Blend the pistachios: Add the pistachios to the glass or container of your hand blender. Blend at high power, stopping periodically to scrape down the sides with a spoon or spatula.

  2. Be patient: Continue blending until the natural oils are released and a creamy, buttery texture forms. This may take several minutes.

  3. Store it right: Transfer the pistachio cream to a clean, lidded jar or airtight container. Let it cool to room temperature before sealing and storing in the fridge.


Serving Ideas

  • Spread on toast with sliced figs or strawberries

  • Stir into porridge or yogurt

  • Use as a filling for pastries or crepes

Storage
