Ingredients
1 kilogram / 2.2 lbs raw peanuts (unsalted)
Instructions
Roast the peanuts: Preheat your oven to 180°C / 350°F. Spread the peanuts in a single layer on a baking sheet and roast for 10–15 minutes, or until golden and fragrant. Shake the pan halfway through for even toasting.
Cool slightly: Transfer the peanuts to a bowl and let them cool for a few minutes.
Prepare the crunchy bits: Set aside 1 cup of the roasted peanuts. Lightly crush or pulse them in a food processor until you get small pieces—these will give your peanut butter that classic crunchy texture. Set aside.
Blend the rest: Add the remaining peanuts to your hand blender or food processor. Blend at high speed for about 6 minutes, stopping to scrape down the sides occasionally. It will first become crumbly, then pasty, and finally transform into a smooth, creamy butter as the natural oils are released.
Mix in the crunch: Transfer the creamy peanut butter to a bowl. Stir in the chopped peanuts until evenly combined.
Store and enjoy: Spoon into a clean jar or airtight container. Let cool to room temperature before sealing. Refrigerate to keep it fresh.

Storage
