🧾 Ingredients
Basil: 3.5 oz / 100 gr.
Pasta: 8 oz / 250 gr.
Vegan parmesan: 7 oz / 200 gr.
Pistachios: 2.5 oz / 75 gr.
Garlic: 2 cloves
Olive oil: 5.5 fl oz / 160 ml
Cherry tomatoes: 6 units
👨🍳 Instructions
Cook the pasta al dente in a pot of boiling water. Refer to the pasta package for timing.
While the pasta cooks, halve the cherry tomatoes and sauté them in a pan over medium-low heat with a bit of vegetable oil.
In a hand blender cup, blend the basil, garlic, pistachios, vegan parmesan, and olive oil until smooth.
Once the pasta is cooked, add a few tablespoons of the pasta water to the pan with the sautéed tomatoes.
Add the drained pasta and the pesto sauce to the pan.
Turn off the heat and stir gently until everything is well combined.
