This tropical papaya cake is a delightful blend of fruity sweetness and wholesome goodness. With banana for natural moisture and a swirl of nut butter, this air fryer treat is incredibly soft, satisfying, and refreshingly different. Perfect as a healthy dessert or snack!


Kitchen Tools

  • Air fryer

  • Hand blender

  • Cake pan or air fryer-safe mold


Ingredients

  • 60 ml vegan milk (approx. 2 fl oz)

  • 4 tablespoons oatmeal

  • 1 ripe banana

  • 1 teaspoon baking powder

  • 2 slices of papaya (fresh, thinly sliced)

  • 1 tablespoon nut butter (e.g., almond or peanut)


Instructions

  1. Make the flour: In a bowl, combine the oatmeal and baking powder. Use a hand blender to grind into a fine flour.

  2. Prepare the batter: Add the banana and vegan milk to the bowl. Blend everything together until you get a smooth, thick batter.

  3. Layer the flavors: Pour half of the batter into a greased cake pan. Add a layer of papaya slices and a swirl of nut butter. Repeat with the remaining batter, papaya, and nut butter.

  4. Air fry to golden perfection: Place the pan in the air fryer and bake at 200°C (390ºF) for 10 minutes.

  5. Cool and enjoy: Let the cake rest at room temperature for a few minutes before serving.


Serving Ideas

  • Drizzle with extra nut butter or maple syrup.

  • Top with coconut flakes or crushed nuts.

  • Enjoy with a scoop of dairy-free yogurt for a complete snack.
