This Panini XXL is more than a sandwich — it's a wholesome, high-protein, fiber-rich bread alternative that you can bake in under 20 minutes. Made with oats, egg, and a mix of savory spices like onion and turmeric, it's soft in the middle, slightly crisp on the edges, and big enough to hold whatever you're craving: cheese, grilled veggies, mushrooms, or even avocado and hummus.

🧾 Ingredients


Makes 1 large panini (serves 1–2)

  • Organic egg: 1 unit

  • Oatmeal (whole rolled or quick oats): 50 g / 1.75 oz (about ½ cup)

  • Oat flour: 3 g (approx. 1 heaping teaspoon)

  • Onion powder: 1 teaspoon

  • Turmeric powder: ½ teaspoon (for color + anti-inflammatory benefits)

  • Water: 75 ml / 2.5 fl oz

  • Salt & black pepper: to taste

  • Optional toppings: shredded cheese, mushrooms, sliced tomato, herbs, vegan sausage, etc.


👨‍🍳 Instructions


  1. Mix dry ingredientsIn a mixing bowl, combine the oatmeal, oat flour, onion powder, turmeric, and a pinch of salt and pepper.

  2. Add liquids and blendPour in the water and egg. Use a hand blender or food processor to blend everything into a thick, smooth batter.

  3. Form the panini baseLine a baking tray with parchment or a silicone mat. Spoon the batter onto the tray and spread into a flat, oval or rectangle shape — about 1–1.5 cm (½ inch) thick.

  4. Bake the baseBake in a preheated oven at 190°C / 375°F for 10 minutes. Check the texture: if it's still too soft, give it 1–2 more minutes.

  5. Add toppings (optional)Once the base is firm, top with ingredients like cheese, mushrooms, grilled veggies, or anything else you love. Return to the oven for another 5 minutes to melt and combine.

  6. Cool and serveRemove from the oven and let cool for a few minutes. Slice or fold, and enjoy as an open-faced sandwich, folded panini, or hearty toast base.
