Mix dry ingredientsIn a mixing bowl, combine the oatmeal, oat flour, onion powder, turmeric, and a pinch of salt and pepper.
Add liquids and blendPour in the water and egg. Use a hand blender or food processor to blend everything into a thick, smooth batter.
Form the panini baseLine a baking tray with parchment or a silicone mat. Spoon the batter onto the tray and spread into a flat, oval or rectangle shape — about 1–1.5 cm (½ inch) thick.
Bake the baseBake in a preheated oven at 190°C / 375°F for 10 minutes. Check the texture: if it's still too soft, give it 1–2 more minutes.
Add toppings (optional)Once the base is firm, top with ingredients like cheese, mushrooms, grilled veggies, or anything else you love. Return to the oven for another 5 minutes to melt and combine.
