Ingredients
1 orange (with peel, washed and chopped)
20 ml olive oil (approx. 0.5 oz)
100 ml dairy yogurt (approx. 3.5 oz)
2 organic eggs
90 g oat flour (approx. 3 oz)
1 rice flour cake unit (or approx. 1/4 cup rice flour)
15 g baking powder
A few drops of vanilla essence (optional)
Sweetener of choice (to taste)
Instructions
Blend wet ingredients: In a blender, combine the chopped orange, olive oil, yogurt, eggs, vanilla essence (optional), and sweetener. Blend until smooth.
Add dry ingredients: Pour the mixture into a bowl and add oat flour, rice flour, and baking powder. Stir until fully incorporated.
Bake: Pour the batter into a greased loaf pan and bake in a preheated oven at 180°C/350ºF for 30 minutes.
Cool and serve: Let the cake rest at room temperature before slicing.
Serving Suggestions
Sprinkle with powdered sugar or decorate with orange zest.
Serve with a scoop of vanilla yogurt or fruit jam.
