A savory, earthy spread made with sautéed mushrooms and herbs. Great for toast, crackers, or as a side with roasted vegetables.

Ingredients
3 garlic cloves
1 onion
10 mushrooms (medium-sized)
1 tablespoon paprika
1 tablespoon dried oregano
2 tablespoons almond flour
3 g agar-agar
60 ml olive oil (approx. 1/4 cup)
120 ml water (approx. 1/2 cup)
Salt and pepper to taste
Instructions
Sauté aromatics: In a frying pan with a bit of olive oil, lightly brown the garlic.
Cook onion and mushrooms: Add the chopped onion and cook until translucent. Add sliced mushrooms and cook until soft.
Add spices: Stir in paprika, oregano, a dash of pepper, and optional smoked seasoning. Cook for 2 more minutes.
Blend: Transfer everything to a hand blender jar. Add almond flour, olive oil, water, and agar-agar. Blend thoroughly until smooth.
Simmer: Return the blended mixture to the pan and cook over low heat, stirring constantly, for about 3 minutes.
Cool and store: Let it cool completely before transferring to a covered container. Refrigerate.
