📋 Ingredients
Makes 6 empanadas
Empanada dough discs: 6 units
Onion (chopped): 1/2 unit
Mushrooms (sliced): 200 g / 7 oz
Garlic powder: 1 teaspoon
Onion powder: 1 teaspoon
Cumin: 1 teaspoon
Paprika: 1 teaspoon
Cornstarch: 1 teaspoon
Vegan milk (soy or similar): 1 tablespoon
Salt, to taste
Olive oil, for cooking
👨🍳 Instructions
Sauté the baseChop the onion and sauté it in a frying pan over medium heat with a bit of olive oil until translucent.
Season and simmerAdd garlic powder, onion powder, cumin, paprika, soy milk, and cornstarch. Stir well and add salt to taste.
Add mushroomsSlice mushrooms finely and stir into the pan. Lower the heat and cook for 10 minutes, stirring occasionally.
Fill the empanadasLet the filling cool slightly. Place a spoonful in the center of each empanada disc.
Fold and sealFold over and seal the edges using a fork or your fingers. Place on a greased baking sheet.
BakePreheat the oven to 180ºC / 350ºF. Bake the empanadas for about 25 minutes or until golden.
