Mix dry ingredientsIn a bowl, combine the protein powder, baking powder, and xanthan gum. Mix well to distribute evenly.
Add wet ingredientsAdd the egg, yogurt, orange zest, and your chosen sweetener (like vanilla or orange blossom water). Stir until a smooth, thick batter forms.
Add your festive touchFold in optional toppings like chopped nuts, raisins, or mini chocolate chips.
Fill the moldsSpoon the mixture into muffin cups or a silicone muffin pan — filling each cup about ¾ full.
Air fryPreheat your air fryer to 180°C / 350ºF. Place the muffin pan in the basket and cook for 5 to 7 minutes, checking after 5 minutes. They're done when puffed and a toothpick comes out clean.
Cool and enjoyRemove and let cool to room temperature before serving. The texture will continue to set as they rest.
