Ingredients
200 g / 7 oz fresh or frozen mango (peeled and diced)
125 ml / 4 fl oz soy yogurt (unsweetened)
10 g red pepper (chopped)
1 teaspoon curry powder
1/4 teaspoon xanthan gum
5 drops mango essence (optional but enhances aroma)
Optional: 1 teaspoon mustard (if using as a natural yellow dye)
Salt to taste
Instructions
Combine all ingredients: Add the mango, soy yogurt, red pepper, curry powder, xanthan gum, and mango essence to a mixing bowl. Add mustard if you're using it for extra color.
