Makes 3–4 small breads

  • Organic egg: 1 unit

  • Oat flour: 50 g / 2 oz (approx. 5 tablespoons)

  • Onion powder: 1 tablespoon (or to taste)

  • Fresh cheese (crumbled or grated): 50 g / 2 oz (e.g. feta, ricotta, or vegan soft cheese)

  • Olive oil or butter: for greasing the pan

  1. Mix the batterIn a bowl, combine the egg, oat flour, onion powder, and cheese. Stir until a thick, sticky batter forms. Let rest for 1–2 minutes if needed to thicken slightly.

  2. Shape & cookHeat a non-stick frying pan over medium-high heat and lightly grease it. Using a spoon, form small mounds of the batter and place them in the pan, gently shaping them into round, muffin-like forms.

  3. Pan-fry until goldenCook each side for about 2–3 minutes, or until golden and firm. Flip gently and brown the other side.

  4. Cool slightly & serveLet them rest for a minute before serving. Enjoy warm on their own, or with dips like hummus, yogurt sauce, or guacamole.
