📋 Ingredients
Makes 1 medium pizza
Lentils: 100 g / 3.5 oz
Water: 100 ml / 3.5 fl oz (for blending)
Fried tomato sauce: 30 g / 1 oz
Vegetable mix (pre-cooked or sautéed): 60 g / 2 oz
Vegan cheese, grated: 40 g / 1.5 oz
👨🍳 Instructions
Soak the lentilsPlace lentils in hot water and let soak for 1 hour.
Blend into a batterDrain and add lentils to a blender with 3.5 fl oz of fresh water. Blend until smooth.
Prebake the crustLine a baking tray with parchment paper. Pour the batter onto it and spread into a circle. Bake at 190ºC / 375ºF for 15 minutes.
Add toppingsRemove from the oven and top the crust with fried tomato sauce, vegetable mix, and vegan cheese (plus any extras you love).
Final bakeReturn to the oven and bake at 190ºC / 375ºF for another 7 minutes, or until the cheese is melted and edges are crisp.
