This quick vegan sobao cake combines the tang of real lemon with the nourishing power of oat flour and plant-based protein. It’s light, satisfying, and perfect for when you want a comforting homemade sweet treat without the wait.


Kitchen Tools

  • Microwave

  • Mixing bowl

  • Spoon or spatula


Ingredients

  • 20 g oat flour (approx. 1 oz)

  • 20 g plant-based protein powder (approx. 1 oz)

  • 3 g baking powder (approx. 1/2 tsp)

  • Zest of 1 lemon

  • 50 ml soy yogurt (approx. 1.5 fl oz)

  • 50 ml plant-based milk (approx. 1.5 fl oz)

  • Optional: sweetener of your choice


Instructions

  1. Combine dry ingredients: In a bowl, mix the oat flour, baking powder, and protein powder.

  2. Add wet ingredients: Stir in the soy yogurt, plant-based milk, and lemon zest. Add sweetener if desired and mix until smooth.

  3. Prepare to cook: Lightly grease a microwave-safe mug or bowl with margarine or vegetable oil.

  4. Microwave it: Pour the batter into the container and microwave on high for 2 minutes.

  5. Rest and enjoy: Let it cool slightly at room temperature before serving. For an extra protein boost, you can sprinkle a bit more protein powder on top.
