Honey: 5 tablespoons

Slice the eggplant into medallions.
In a bowl, whisk together the egg, milk, and cornstarch. Add salt and pepper to taste. Optional: a pinch of turmeric powder.
Heat a little olive oil in a frying pan over medium-low heat for 2 minutes.
Dip the eggplant slices into the egg mixture, then cook in the pan until golden on both sides.
