🧾 Ingredients

  • Eggplant: 1 unit

  • Organic eggs: 1 unit

  • Dairy milk: 1 tablespoon

  • Cornstarch: 1/2 oz / 15 g

  • Honey: 5 tablespoons


👨‍🍳 Instructions

  1. Slice the eggplant into medallions.

  2. In a bowl, whisk together the egg, milk, and cornstarch. Add salt and pepper to taste. Optional: a pinch of turmeric powder.

  3. Heat a little olive oil in a frying pan over medium-low heat for 2 minutes.

  4. Dip the eggplant slices into the egg mixture, then cook in the pan until golden on both sides.

  5. Once cooked, remove from the pan and drizzle with honey before serving.
