Eggplants: 2 units
Fried tomato sauce: 1/2 can
Coconut cream: 3 tablespoons
Vegan cheese: 3.5 oz / 100 gr
👨🍳 Instructions
Cut the ends of the eggplants and slice them lengthwise in half.
Make shallow cuts into the flesh to help absorb flavors.
Place in a microwave-safe container, season with salt and pepper, and drizzle with a little vegetable oil.
Microwave for 7 minutes.
Carefully remove and top with tomato sauce, coconut cream, and grated vegan cheese.
Return to the microwave for an additional 2 minutes.
Let it rest at room temperature before serving—caution, the container will be hot!
