🧾 Ingredients

  • Eggplants: 2 units

  • Fried tomato sauce: 1/2 can

  • Coconut cream: 3 tablespoons

  • Vegan cheese: 3.5 oz / 100 gr


👨‍🍳 Instructions

  1. Cut the ends of the eggplants and slice them lengthwise in half.

  2. Make shallow cuts into the flesh to help absorb flavors.

  3. Place in a microwave-safe container, season with salt and pepper, and drizzle with a little vegetable oil.

  4. Microwave for 7 minutes.

  5. Carefully remove and top with tomato sauce, coconut cream, and grated vegan cheese.

  6. Return to the microwave for an additional 2 minutes.

  7. Let it rest at room temperature before serving—caution, the container will be hot!
