  4. Cover and cookCover the pan and let the omelette cook for 2–3 minutes, or until the top is slightly set but still glossy (medium-rare texture).

  5. Flip and finishUncover the pan and gently flip the omelette. Cook uncovered for 1 more minute to finish cooking through and brown slightly on the other side.
