🧾 Ingredients


Serves 1–2

  • Tofu (firm or silken): 200 g / 7 oz

  • Rice flour: 50 g / 2 oz (approx. 6 tablespoons)

  • Vegan milk (unsweetened, e.g. soy or oat): 150 ml / 5 fl oz

  • Carrot: 50 g / 2 oz (1 small carrot, peeled and chopped)

  • Nutritional yeast: 1 tablespoon

  • Garlic powder: ½ teaspoon

  • Baking powder: ½ teaspoon

  • Vegan cheese: 15 g / ½ oz (grated or small cubes)

  • Olive oil: for cooking

  • Salt: to taste


👨‍🍳 Instructions


  1. Cook the carrotBring a small pot of water to a boil. Add the chopped carrot and cook until soft, about 7–10 minutes. Drain and transfer to a blender or mixing container.

  2. Blend the batterAdd the tofu, rice flour, vegan milk, nutritional yeast, garlic powder, baking powder, and a pinch of salt to the cooked carrot. Blend until completely smooth and creamy.

  3. Heat the panPlace a non-stick frying pan over medium heat and add a little olive oil to coat the bottom.

  4. Cook the omelette basePour the batter into the pan and spread it evenly into a thin, round shape. Cook for about 2 minutes, or until the edges begin to set and the bottom is lightly golden.

  5. Add the fillingPlace the vegan cheese in the center of the omelette. Let it soften slightly from the heat.

  6. Fold like a proUsing a spatula, gently fold the omelette in thirds or in half, enclosing the cheese. Press lightly to seal.

  7. Finish cookingLet it cook for another minute, until the outside is lightly browned and the cheese is melty.

  8. Serve warmSlide onto a plate and enjoy immediately with a sprinkle of fresh herbs, avocado, or a light side salad.
