This coffee cake combines the richness of almond flour with the boldness of instant coffee, creating a moist and satisfying dessert you can whip up in the microwave.

  • Hand blender

  • Microwave-safe bowl


Ingredients

  • 20 g oat flour (approx. 1 oz)

  • 20 g almond flour (approx. 1 oz)

  • 1/2 teaspoon instant coffee

  • 3 g baking powder (approx. 1/2 teaspoon)

  • 1 organic egg


Instructions

  1. Dissolve the coffee: In 30 ml of boiling water, dissolve the instant coffee.

  2. Mix everything: In a microwave-safe bowl, combine the oat flour, almond flour, baking powder, egg, and dissolved coffee. Mix thoroughly using a hand blender. Add your preferred sweetener if desired.

  3. Microwave: Cook the mixture in the microwave for 1 minute. Cooking times may vary slightly depending on your microwave.

  4. Cool and enjoy: Let the cake rest at room temperature for a couple of minutes before serving.


Serving Suggestions

  • Dust with a bit of cinnamon or cocoa powder.

  • Serve with a dollop of Greek yogurt or plant-based cream.
