Makes 1 loaf

  • Ripe bananas: 2 large (mashed)

  • Oat flour: 150 g / 5 oz (approx. 1½ cups)

  • Vegan milk (e.g. almond, soy, oat): 150 ml / 5 fl oz (approx. ⅔ cup)

  • Baking powder: 10 g (approx. 2 teaspoons)

  • Organic eggs: 2 units

  • Olive oil: 3 teaspoons (approx. 15 ml)

  • Vanilla extract: 1 teaspoon

  1. Preheat the ovenSet your oven to 200°C / 390°F and lightly grease your cake or loaf pan (or line with parchment paper).

  2. Mix the batterIn a mixing bowl, mash the bananas until smooth. Add the oat flour, vegan milk, baking powder, eggs, olive oil, and vanilla. Blend everything together using a pastry blender, hand mixer, or spoon until fully combined and smooth.

  3. BakePour the batter into the prepared pan and smooth out the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

  4. Cool and serveLet the banana bread rest at room temperature for at least 10–15 minutes before slicing. Enjoy warm or store for later!
