🧾 Ingredients

  • Tofu: 14 oz / 400 gr.

  • Potatoes: 8 oz / 250 gr.

  • Nutritional yeast: 4 tablespoons

  • Coconut cream: 3.5 oz / 100 gr.

  • Vegetable soup: 8 fl oz / 240 ml

  • Garlic: 1 clove

  • Pistachios: 1/2 cup

  • Blueberries: 1/2 cup


👨‍🍳 Instructions

  1. Peel and cook the potatoes until soft.

  2. Transfer them to a bowl and add tofu, yeast, coconut cream, vegetable broth, olive oil, and garlic.

  3. Blend very well using the hand blender. Add salt and pepper to taste.

  4. Transfer the mixture to a pan and cook over medium heat, stirring for about 15 minutes.

  5. Pour into a greased pan and let it rest at room temperature for a few minutes.

  6. Once cooled, refrigerate for at least 1 1/2 hours.

  7. Before serving, top with pistachios and blueberries, mixing them in gently.
