🧾 Ingredients
Tofu: 14 oz / 400 gr.
Potatoes: 8 oz / 250 gr.
Nutritional yeast: 4 tablespoons
Coconut cream: 3.5 oz / 100 gr.
Vegetable soup: 8 fl oz / 240 ml
Garlic: 1 clove
Pistachios: 1/2 cup
Blueberries: 1/2 cup
👨🍳 Instructions
Peel and cook the potatoes until soft.
Transfer them to a bowl and add tofu, yeast, coconut cream, vegetable broth, olive oil, and garlic.
Blend very well using the hand blender. Add salt and pepper to taste.
Transfer the mixture to a pan and cook over medium heat, stirring for about 15 minutes.
Pour into a greased pan and let it rest at room temperature for a few minutes.
Once cooled, refrigerate for at least 1 1/2 hours.
Before serving, top with pistachios and blueberries, mixing them in gently.
