These chickpea cookies are packed with protein and fiber, offering a deliciously wholesome alternative to traditional treats. Ideal for snack time or a light dessert.

📋 Ingredients

Serves 6–8

  • Cooked chickpeas: 14 oz / 400 gr.

  • Oat flour: 3.5 oz / 100 gr.

  • Chocolate (chunks): 7 oz / 200 gr.

  • Vegan milk: 12 fl oz / 350 ml

  • Erythritol: 1.5 oz / 40 gr.

  • Baking powder: 1 tablespoon


👨‍🍳 Instructions

  • Blend the wet baseIn a pot or deep container, blend the chickpeas, erythritol, and vegan milk with a hand blender. Add a few drops of vanilla extract if desired.

  • Add dry ingredientsTransfer the blended mix to a bowl. Add the oat flour, baking powder, and most of the chocolate chunks.

  • Combine and shapeStir thoroughly with a spoon until fully combined.

  • BakePour the dough into a greased tart pan and top with the remaining chocolate chunks. Bake at 180°C/350ºF for 35 minutes.

  • Check and coolTest with a toothpick for doneness. If needed, bake for a few more minutes. Let cool to room temperature.

  • Sprinkle with cinnamon or a dusting of powdered erythritol

  • Serve with your favorite plant-based ice cream
