🧾 Ingredients
Carrot: 2 units (grated)
Flax flour: 2 tablespoons
Oatmeal: 6 tablespoons
Whole wheat flour: 2.5 oz / 75 gr.
Sugar: 1 tablespoon
Baking powder: 1 tablespoon
Cinnamon: 1 tablespoon
Anis: 1.5 fl oz / 50 ml
Olive oil: 4.5 fl oz / 140 ml
Vegan milk: as needed to bind
👨🍳 Instructions
Put the two grated carrots in a bowl.
Stir in the remaining dry ingredients: flax flour, oatmeal, whole wheat flour, sugar, baking powder, cinnamon, and anis.
Pour in the plant-based milk and olive oil.
Mix thoroughly until a dough forms.
Divide into portions and shape into cookies. Place on a baking tray lined with parchment paper.
Bake for 25 minutes at 180°C/350ºF, until golden and set.
