🧾 Ingredients

  • Carrot: 2 units (grated)

  • Flax flour: 2 tablespoons

  • Oatmeal: 6 tablespoons

  • Whole wheat flour: 2.5 oz / 75 gr.

  • Sugar: 1 tablespoon

  • Baking powder: 1 tablespoon

  • Cinnamon: 1 tablespoon

  • Anis: 1.5 fl oz / 50 ml

  • Olive oil: 4.5 fl oz / 140 ml

  • Vegan milk: as needed to bind


👨‍🍳 Instructions

  1. Put the two grated carrots in a bowl.

  2. Stir in the remaining dry ingredients: flax flour, oatmeal, whole wheat flour, sugar, baking powder, cinnamon, and anis.

  3. Pour in the plant-based milk and olive oil.

  4. Mix thoroughly until a dough forms.

  5. Divide into portions and shape into cookies. Place on a baking tray lined with parchment paper.

  6. Bake for 25 minutes at 180°C/350ºF, until golden and set.
