Serves 2–4
Oat flour: 3.5 oz / 100 gr.
Almond flour: 1 oz / 30 gr.
Erythritol: 1 unit (or to taste)
Baking powder: 10 gr.
Olive oil: 1 fl oz / 25 ml
Dairy yogurt: 4 fl oz / 125 ml
Organic eggs: 2 units
Nuts (chopped): 1 oz / 30 gr.
Carrot (grated): 5 oz / 150 gr.
👨🍳 Instructions
Mash the carrotIn a container, mash or finely grate the carrot and set it aside.
Blend the batterAdd the remaining ingredients to the container. Use the hand blender to combine everything into a smooth mixture.
Microwave the cakePour the mixture into a microwave-safe container. Cook in the microwave for 6 minutes.
Cool and serveLet the cake rest at room temperature. Add your favorite toppings like yogurt, cinnamon, or crushed nuts.
