📋 Ingredients

Serves 2–4


  • Oat flour: 3.5 oz / 100 gr.

  • Almond flour: 1 oz / 30 gr.

  • Erythritol: 1 unit (or to taste)

  • Baking powder: 10 gr.

  • Olive oil: 1 fl oz / 25 ml

  • Dairy yogurt: 4 fl oz / 125 ml

  • Organic eggs: 2 units

  • Nuts (chopped): 1 oz / 30 gr.

  • Carrot (grated): 5 oz / 150 gr.


👨‍🍳 Instructions


  • Mash the carrotIn a container, mash or finely grate the carrot and set it aside.

  • Blend the batterAdd the remaining ingredients to the container. Use the hand blender to combine everything into a smooth mixture.

  • Microwave the cakePour the mixture into a microwave-safe container. Cook in the microwave for 6 minutes.

  • Cool and serveLet the cake rest at room temperature. Add your favorite toppings like yogurt, cinnamon, or crushed nuts.


🍽 Serving Suggestions

  • Serve with a dollop of vegan cream cheese frosting

  • Top with shredded coconut or chopped walnuts

  • Dust with cinnamon and a drizzle of maple syrup
