🍋 Cafeteria-Style Lemon Cake

Ingredients

  • 200 g sugar (approx. 7 oz)

  • Zest and juice of 1 lemon

  • 3 organic eggs

  • 190 g wheat flour (approx. 7 oz)

  • 5 g baking powder

  • 120 ml dairy milk (approx. 4 fl oz)

  • 1 tbsp icing sugar (for glaze)


Instructions

  1. Mix base ingredients: In a large bowl, combine the sugar, lemon zest, and 2 tsp vegetable oil. Mix well.

  2. Add wet ingredients: Add the eggs and lemon juice. Mix until well incorporated.

  3. Add dry ingredients: Sift in the flour, baking powder, and a pinch of salt. Mix using a spatula in a folding motion.

  4. Incorporate milk: Gradually pour in the milk while stirring to form a smooth batter.

  5. Bake: Pour the batter into a greased loaf pan and bake in a preheated oven at 160°C/325ºF for 50 minutes.

  6. Cool: Once baked, remove from the oven and let it cool on a rack at room temperature.

  7. Prepare glaze: In a small bowl, mix the icing sugar with the juice of 2 lemons until smooth.

  8. Glaze and serve: Drizzle the glaze over the cooled cake and let it set before slicing.


Serving Suggestions

  • Enjoy with a hot cup of coffee or herbal tea.

  • Add a dollop of whipped cream or lemon zest for extra flair.
