Ingredients
200 g sugar (approx. 7 oz)
Zest and juice of 1 lemon
3 organic eggs
190 g wheat flour (approx. 7 oz)
5 g baking powder
120 ml dairy milk (approx. 4 fl oz)
1 tbsp icing sugar (for glaze)
Instructions
Mix base ingredients: In a large bowl, combine the sugar, lemon zest, and 2 tsp vegetable oil. Mix well.
Add wet ingredients: Add the eggs and lemon juice. Mix until well incorporated.
Add dry ingredients: Sift in the flour, baking powder, and a pinch of salt. Mix using a spatula in a folding motion.
Incorporate milk: Gradually pour in the milk while stirring to form a smooth batter.
Bake: Pour the batter into a greased loaf pan and bake in a preheated oven at 160°C/325ºF for 50 minutes.
Cool: Once baked, remove from the oven and let it cool on a rack at room temperature.
Prepare glaze: In a small bowl, mix the icing sugar with the juice of 2 lemons until smooth.
Glaze and serve: Drizzle the glaze over the cooled cake and let it set before slicing.
