This blueberries cake is a delightful mix of wholesome oats, natural sweetness, and juicy berries. It's quick to make in an air fryer and works perfectly as a nourishing breakfast or a light dessert.

Ingredients
80 g oat flour (approx. 3 oz)
120 ml dairy milk (approx. 4 fl oz)
1 ripe banana
5 g baking powder (approx. 1 teaspoon)
1 organic egg
1/2 cup fresh or frozen blueberries
Instructions
Prep the dry mix: In a mixing bowl, combine oat flour and baking powder.
Blend the base: In a separate bowl, blend the banana, milk, and egg using a hand blender until smooth.
Combine & add berries: Pour the wet mixture into the dry ingredients and stir to form a batter. Gently fold in the blueberries with a spatula.
Fill the pan: Transfer the mixture into a greased cake pan or mold.
Bake in air fryer: Air fry at 180°C (350°F) for 15 minutes. Check for doneness with a toothpickāit should come out clean.
Cool & serve: Let the cake rest at room temperature before serving.
Serving Tips
Dust with powdered erythritol or cinnamon.
Drizzle with a little nut butter or yogurt.
Enjoy warm or chilled with tea or coffee.
