It’s made with whole-food ingredients like ripe banana, olive oil, panela (unrefined cane sugar), and gets a delicious flavor twist from instant coffee and vanilla. You’ll get rich flavor, a moist crumb, and a homemade cake in just 25 minutes.

Makes 1 small loaf

  • Banana: 1 medium, ripe (approx. 100–120 g / 3.5–4.2 oz)

  • Olive oil: 2 tablespoons (approx. 30 ml)

  • Vegan milk (e.g. soy, oat, almond): 4 tablespoons (approx. 60 ml)

  • Vanilla extract: ½ teaspoon (approx. 2.5 ml)

  • Panela powder (or coconut sugar or brown sugar): 2 tablespoons (approx. 25 g)

  • Whole wheat flour: 4 tablespoons (approx. 40 g)

  • Baking powder: 1 teaspoon (approx. 5 g)

  • Instant coffee (optional, for flavor depth): 2 tablespoons (or to taste)


👨‍🍳 Instructions


  1. Blend the batterAdd all ingredients — banana, olive oil, plant-based milk, vanilla, panela, flour, baking powder, and instant coffee — into the blender glass. Blend until smooth and completely integrated.

  2. Prepare the panLightly grease a loaf pan or cake mold that fits into your air fryer. Pour the batter into the pan and smooth the top with a spoon or spatula.

  3. Bake in the air fryerPreheat your air fryer to 180°C / 350ºF if needed. Place the cake pan inside and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

  4. Cool and serveLet the banana cake rest at room temperature for 10 minutes before slicing. Serve warm with nut butter, fruit, or a dusting of cinnamon.
