Preparation
To prepare these delicious Iced Keto Bars, follow these simple steps:
In a mixing bowl, combine vegan Greek yogurt and grated coconut until fully integrated.
Line a cake pan with parchment paper and spread the mixture evenly.
Freeze for 30 minutes until firm.
Melt chocolate (adding 1 tbsp coconut oil if needed for smoothness).
Remove pan from freezer and pour melted chocolate over the yogurt layer.
Return to freezer for 3 hours until completely set.
Let thaw for 15 minutes before cutting into bars.
Store unused bars in freezer.
