Orange 1 unit
Olive Oil 0.5 fl oz
Dairy Yogurt 3.5 fl oz
Organic Eggs 2 units
Oat Flour 3 oz
Rice Flour 2 oz
Baking Powder 1/2 oz
Preparation
To prepare this Orange Cake, follow these steps:
Wash orange thoroughly and cut into quarters (leave peel on).
In blender, combine orange pieces, olive oil, yogurt, eggs, and vanilla essence. Blend until smooth.
Pour mixture into large mixing bowl.
Sift together oat flour, rice flour and baking powder.
Gradually fold dry ingredients into wet mixture until just combined.
Grease loaf pan with olive oil or butter.
Pour batter into prepared pan, smoothing the top.
Bake at 350°F (175°C) for 30 minutes.
Test doneness by inserting toothpick - it should come out clean.
Cool in pan for 10 minutes, then transfer to wire rack.
