Ingredients

Oat Flour 2.5 oz (gluten-free certified if needed)

Almond Flour 2.5 oz (for protein boost)

Dehydrated Dates 3.5 oz (about 10 Medjool dates, pitted)

Olive Oil 1 fl oz (extra virgin recommended)

Blueberries 1/2 Cup (fresh or frozen)

Vanilla 1 teaspoon (pure extract for best flavor)

Preparation

For perfectly chewy cookies every time:

  1. Blend dates with olive oil and vanilla until paste forms

  2. Mix with flours and blueberries (fold gently to avoid crushing)

  3. Shape dough between parchment sheets to 1/2" thickness

  4. Cut into rounds using glass or cookie cutter

  5. Bake at 400°F (200°C) for 8 minutes - they'll firm while cooling
