Ingredients

Egg Whites 7 fl oz

Lemon 1 unit

Oat Flour 1 oz

Baking Powder 3 gr


Preparation

To prepare this light Lemon Cake, follow these steps:

  1. Whip egg whites:

    • Beat until stiff peaks form

    • About 3-5 minutes on high speed


  2. Fold in dry ingredients:

    • Add lemon zest

    • Gently incorporate oat flour

    • Mix in baking powder


  3. Sweeten to taste:

    • Add preferred sweetener


  4. Bake:

    • Pour into greased loaf pan

    • Cook at 350°F (175°C) for 15 minutes


Doneness Test

• Insert toothpick

• If moist, bake 3-5 more minutes


Cooling & Serving

• Rest 15 minutes

• Dust with powdered sugar

• Garnish with lemon slice
