Ingredients

Eggplants 1 unit

Organic eggs 1 unit

Cow Milk 1 tablespoon

Cornstarch 15 gr

Honey 5 tablespoons


Preparation

To prepare these delicious Honey-Topped Eggplant Medallions, follow these simple steps:

  1. Wash and slice eggplant into 1/2-inch rounds

  2. In a shallow bowl, whisk together egg, milk and cornstarch

  3. Season batter with salt, pepper and optional turmeric

  4. Heat olive oil in pan over medium-low for 2 minutes

  5. Dip eggplant slices in egg mixture, coating both sides

  6. Fry medallions 3-4 minutes per side until golden

  7. Transfer to paper towels to drain excess oil

  8. Drizzle generously with honey while still warm
