Cow Milk 1 tablespoon
Cornstarch 15 gr
Honey 5 tablespoons
Preparation
To prepare these delicious Honey-Topped Eggplant Medallions, follow these simple steps:
Wash and slice eggplant into 1/2-inch rounds
In a shallow bowl, whisk together egg, milk and cornstarch
Season batter with salt, pepper and optional turmeric
Heat olive oil in pan over medium-low for 2 minutes
Dip eggplant slices in egg mixture, coating both sides
Fry medallions 3-4 minutes per side until golden
Transfer to paper towels to drain excess oil
Drizzle generously with honey while still warm
