Homemade Vinaigrette

Tired of store-bought dressings? This 5-minute white bean vinaigrette delivers creamy texture, bold flavor, and plant-based protein without artificial additives. The combination of garlic, nutritional yeast, and lemon creates a versatile dressing perfect for salads, grain bowls, or veggie dips.

Utensils

Hand blender

Ingredients

Cooked White Beans 1/2 Cup

Garlic 1 Clove

Nutritional Yeast 2 tablespoons

Lemon Juice 1 teaspoon

Preparation

To prepare this delicious Homemade Vinaigrette, follow these simple steps:

  1. Place the cooked beans, garlic, salt, nutritional yeast, a tablespoon of sriracha (optional), lemon juice, and a sprig of fresh basil in the blender glass.

  2. Add 1/2 glass of water.

  3. Blend until you obtain a slightly creamy liquid sauce without becoming a cream.

  4. Let it sit in the refrigerator for a couple of minutes before using.

Tips

For extra creaminess:

  • Replace water with unsweetened almond milk or tahini (1 teaspoon).

Spice variations:

  • Swap sriracha for smoked paprika or dijon mustard.

Herb options:

  • Use cilantro or parsley instead of basil for fresh flavor twists.

Thickness control:

  • Add water 1 tablespoon at a time to reach desired consistency.

Storage:

  • Keeps in the fridge for 4 days (stir well before reuse).
