Eggplants 2 units

Fried Tomato Sauce 1/2 can

Coconut Cream 3 tablespoons

Vegan Cheese   3.5 oz


Preparation

To prepare this delicious vegan Gratinated Eggplant, follow these simple steps:


  1. Prepare eggplants:

    • Trim both ends

    • Cut lengthwise into halves

    • Make shallow crosshatch cuts on flesh side


  2. Season and cook:

    • Arrange in microwave-safe dish

    • Season with salt and pepper

    • Drizzle with vegetable oil

    • Microwave on high for 7 minutes


  3. Add toppings:

    • Spread tomato sauce evenly

    • Drizzle with coconut cream

    • Sprinkle grated vegan cheese


  4. Final cooking:

    • Microwave for 2 more minutes


Important Notes

• Always use microwave-safe containers

• Let rest 5 minutes before serving
